If you need TeX modify the script, simply add format_text() and adjust CSS. I do not have time to do it now myself
Moodle filters collide a bit with Book's CSS, that was the reason why they were not used. I am planning to enable filters after they start using CSS in 1.5. We are currently planning some other internal changes in filters too.
