hi, how can i stop the forum from automatically sending a copy to everyones email address.

Either stop forcing subscriptions or go to Permissons and turn off the email postings in the Forum section. I am pretty sure there is a description on this in the Beginning Admin for 1.9.x FAQ which should also apply to Moodle 2, but I have not had a chance to test it yet.
