Forgive me if I'm missing this, but...is there a way to see only ungraded assignments? I'd love a link that says "View all unscored assignments" or something similar. Am I missing something obvious?

They are always listed at the top with a different background colour.

Martin, I'd noticed that the ones needing scoring would be at the top, but hadn't noticed the difference in color. I will look tomorrow when new assignments arrive!
Could it depend upon the theme you are using?

Yes, the colours depend on the theme.

Hi JT, this is a feature of the 'echo-assignment' (view all, view submitted, view submitted but not graded). We did some work on this module to enable our custom grading option (type a number in a box rather than use the drop down) & fixed a bug we found when no SMTP user is specified & added a 'grade all' button (which had been removed from echo-assignment).
I asked the original programmers here (in this forum) whether it was ok for us to stick these fixes in CVS/contrib, since I haven't heard a 'no' yet I guess we will in a few days.
IMO, it's a really nice modification, as it lets you send a graded paper back to the student, something many of our faculty have been asking for, as well as allowing a custom score (some of our faculty give 400 point assignments!), which also helps alot when you are loading a large number of assignments--it can take a long time for your browser to load 100-200 drop down menus!
Anyway, we'll make an announcement here when it's ready.

When the modular assignment module is finally ready I hope you can make this into a new assignment type!

Yes there is and I have been using it for a little while now 
If you look at the discussion WP linked to then you will see a marking block mock up I made. Mike Churchaward developed this for me and he also put together a new marking page.
Hopefully it will be released very soon. Just some problems on my side holding things up a little.
