Hi Thom, you might look at gradebook_cdc (in CVS/contrib-this adds weighting, letters, categories, and more to the moodle gradebook->manual here) for an example.
You may not like it, but Jeff commented the code a bit, so it might help to get orientated.
If you like how it works, there are plenty of things it could do better and we'd be happy to share coding on it.
