Are lessons portable? If I create Branch Tables in one course, can they be used in future or other concurrent courses?

Yes it is very simple to Import an entire lesson from one course into another. Start off in the home page of the course into which you want to bring the lesson. From the Administration block of the course choose "Import", then just follow your nose.
You cannot Import parts of a Lesson, it has to be the entire Lesson.

I have an assignment that can be done in 3 different roles. Can I construct one lesson in role one and then import it and modify it to match roles 2 and 3 or would I be better using a condition, so they choose a path at the top level?

Portable but... inside MOODLE and not between MOODLE 2.0 and the former versions... it was interesting that we could use it similar to a swf file
