I definitely thing the Glossary activity will work much better for what you have described. You can also use the Random Glossary block for added benefit.
The Wiki activity is good for students collaborating on a specific document or project, as you can set that up so they can all edit a specific project without having to email it to each other and wait for it to come back. See the video for an example of how a wiki can be used.
