It's not entirely clear what you mean by "it's automatically overriding some ...". Normally, activities such as quiz and scorm update the gradebook automatically. If, however, grades of such activities are updated directly in the gradebook, the gradebook marks the grade as 'overridden' so that it will not be automatically updated by the activity (which makes sense). Then, if you want to return control over the grade to the activity you need to edit it in the gradebook and clear the 'overriden' mark. Does that makes sense of your case?

Well, to begin to understand what's going on you really need to provide much more information, such as Moodle version, whether this 'oftentimes overriding' applies to certain activities as wholes or to only certain grades in activities, characteristic settings of behaving and misbehaving activities etc.

Could you provide a scenario for this random overriding? Does the gradebook randomly changes a grade which it received from the activity and populates this change to the activity?
