NFS works fine for moodledata, with the exception of sessions. Using NFS to store session data is (a) obviously a lot slower than local disk, (b) can cause problems (occasional session corruption / users getting logged out) if you have more than one webserver.
I don't really see the point in using nfs for moodledata if you only have a single webserver.
