OK - I think I have cracked the problem.
We had created two extra fields in the user profile and set them as REQUIRED. They are way down the bottom of the page and what I wasn't noticing was that one of them was outlined in red, after I attempted to change my profile.
One of those fields is a checkbox, used to indicate whether or not the student is on-campus. This being 'required' seems to make the form insist that the box is checked.
User profile fields are controlled by Administration ► Users ► Accounts ► User profile fields
