I just this morning had time to do some searching... here are a few things I have found.  Will add more if I find any.  These are all connected to Moodle. (I wasn't sure if you were really looking for a Moodle course or a website or both.)

These I couldn't get into the classes, but if you get in touch with them, they might give you some info or some screen shots etc. if you think they might be helpful.

http://www.hansdezwart.info/hosc2007/ an article on setting up Moodel with a couple of school sites listed under students with Special Needs. One is German and one is Dutch.

http://news.kmi.open.ac.uk/11/1151 article on a book with case studies  that suggests "EASY interface in Moodle for special needs students...   Don't know if that will help you or not..

http://www.slideshare.net/mguhlin/3-moodle-multimedia  This is a link to a slide show probably used for a presentation that may give you some ideas of the kinds of things that may need to be in courses for special needs students.
