You can remove student users (and add others, too) via "Assign Roles" in the Administration block in your course.
How about having some students just auditing a course. I have in my doctoral courses some students who opt to just audit the course that they may have already taken. So I enroll them as students, but they are not receiving grades for the class.
I have the same problem:
I have two students who were originally enrolled via a meta-link, but they are no longer in the class.
- Checking the meta-link roster, they are no longer on it.
- They are not on the participants/enrolled users roster for the course either.
Yet, they are STILL in my gradebook.
I checked the assigned users roster that was mentioned in this forum, but they are not there either.
This is annoying. How else could students' names be added to a course gradebook without actually being on the roster.

I suggest you check the "Grader report preferences" page, and make sure that "Show only active enrolments" is set to 'Yes'
