The current set up I have brings different groups together to work on different courses. The teachers of the group have been assigned, but are able to access all courses. I want to assign them to specific courses and give them the ability to access that course only. How do I do this?

To enable teachers to access particular courses rather than all courses, you need to assign users the role of teacher in the course context, rather than in the system context. Please see the documentation Assign roles for more details.
