I am a little confused on what you are trying to achieve
Do you mean that you want to include only some grades into calculation, but not all of them?
If so, you can achieve that with weights, e.g., set category/course aggregation to Weighted Mean and type 0 in the weight column for the grades/categories that you want to exclude from being calculated towards the total.
