we have a course that has used the assignment tool and learners have duly uploaded assignments and may have had them graded.
We want to delete some of the assignements. For example a learner fails to complete the course and leaves, but they have already uploaded an assigment and had it graded. They then come back the following year to start over. How do we get rid of the assignement that is no longer required?
Also if we have past learners hanging about in the course, if we delete them from the course will there uploaded materials be hidden or will they be hanging around in the grade list with no name on them?

I suppose you could use some course reset options. http://docs.moodle.org/en/Reset_course
But there are good reasons not to delete old data and student records. If your course has a start and end date, it might be easier to create a new course at each start date. We use a template from which to create new classrooms (courses) at each of our start dates.
This preserves records and student work without filling up the classroom.
