Maybe you could make use of the 'subcourse' module.
You could then create a separate course (maybe call it 'Introduction to GIS') and add subcourses as activities which would appear in the grade book of your new course. These 'subcourses' pull the grades (course totals) from the courses (subjects) you choose.
