When I export the gradebook to an Excel file, the student's name, ID number, institution, department and any grade fields I check are exported. There is no column identifying which course the grades are from. I assigned a course ID in the course settings but this field is not exported automatically as the student ID is and I do not see a way to choose to export it.
Is there something I am missing?

I do not think you are missing anything, as the export file does not have that info.
But the name of the exported file itself does. It will be named ShrotTitle_grades.xls
