Not directly what you are asking for: did you check a database activity at the front page and all users as students on start page? You can use the database in combination with a RSS feed that shows latest updates.

Did you see the 'people' Block?
An other option is to add thename of the course in the interest field of each students profile and to add a search to this search entry to the course. So you get a page with all users using this tag in the interest field.
