Enrolment

We have set up Moodle for our ministry ordination course of study for our district. There are 24 classes that have to be taken. These courses do not have a set time/date when they are offered. What we'd like to do is this: When a student is enrolled all classes will basically be registered for. As each class is taken and completed we'd like to have the student be able to see what he/she has taken and what they still lack.

Is this possible? Does any one have a better idea for tracking course progression?
