Hi Scot,

Actually, documentation about course creators already exists. Please see Course creator role. As Mary mentions, everyone is welcome to edit and add further information to the page.

I think the reason why there isn't much documentation is because when course creators create a course, they are automatically assigned the role of teacher, and so all the information about course settings, course editing etc. is included in the teacher documentation. (I'm kind of repeating what Mary has said.)
