You may have gotten a reply in one of the other forums that you posted to... just in case here are my two cents.
Sounds like a great program. If you have the server space, you should be able to use moodle. Having college students learn Moodle to help you out shouldn't be a problem, if they are tech savy, they will pick it up pretty quickly. Those with a fewer skills will pick it up with some help. The forums and documentation are here on this site. Many of us would be happy to add our advice if you need it.
