I think the best way for us to get this done is by having a report which works exactly like the user report but only shows grade items which are empty or zero.

Then there should be 3 extra columns:

1. one with the end date (due date) of the activitiy if it has one,
   
2. one column saying submitted, not attempted etc.
3. date of submission/attempt

Do you think this would be easy to do?

A nice way would be if the user report had options which read something like 'All', 'Outstanding', 'Submitted/Attempted' which determine which records are shown.
