Just added a tracker item for this...(CONTRIB-1349)
The email that is sent now when a response is submitted, sends the choice numeric value rather than the text. It would be nicer to receive the actual text of the choice instead. Modify this functionality to do this.

This is a one line change if we don't need a configuration value. Does anyone actually need/use the numeric option?

I guess it would make sense for those responses to be sent with text values. After all numeric values are useful when response data is going to be processed in a spreadsheet or stats package, and obviously responses sent by e-mail are not meant to be thus processed.
