Because the autogroup plugin will read the entry in the profile field and create a group in whichever course they are enrolled and then put the student in it.
For example, I have mine set to the Institution field in Moodle which I map from the company field in Active Directory. So when a student enrolls in a course, a group is automatically created named for whatever is in the Institution field and adds the student to it.
