My question is what to do with students and their assignments after a class has finished. I want to reuse the classes, so is this process as easy deleting the students from the course and deleting their files from the server? I am interested in hearing what others do.

I suppose someone should create a docs page specifically entitled, "So you want to reuse your course...."
If you backup your course, you will note that there are options provided as to the data you include in the backup. Back up without the student data (of course at some point you may also want to back up with student data and then delete the course.) You may then restore the backed up course without student data to a new course (Moodle will fiddle the name and you can play with that....), et voila!
