Item gradings for individuals can be excluded from the totals, but how about an entire column? Is the only way to add the totals as a calculation, with the excluded one left out? The "simple weighted mean" a function on its own, so it would require a bit of calculations, and there is no example on how to achieve the default behaviour with the calculations.(Using 1.9.3+)

I think you are write about the calculations. I did that with my gradebook, which is simple sum of points. However, I never did get the student report to show the total without counting in that category even though the grader report was correct.
You might look here for an example. Some of us were trying to create some more detailed pages to help people set up their gradebook. We would like it if you wanted to add something to the docs!

There is an effort to implement bulk editing in the gradebook. See thread http://moodle.org/mod/forum/discuss.php?d=109444
Perhaps this could be a possible solution for this problem. But the development is still in progress. I put my wish for bulk exclude fuctionality there. We'll see…
