Hi Scott,
If you are in the User Report view, then you can either:
(1) look in the upper-right corner of the screen for the drop-down menu where you can select All users (which show each student's individual report) or select a particular student's name to view their report. (see attached screenshot 1)
OR
(2) from the Choose an action menu on the upper-left, select Grader Report, which will display the whole class in spreadsheet form. (see attached screenshot 2)

I'm not sure I understand your second issue with the categories. You don't want to see all the assignments at once? Or you haven't been able to create categories for the assignments?
If you need to create categories, you can do that by opening the Choose an action menu and selecting Edit Categories and items... You will see the Add category button at the bottom of the screen.
