In the event that any else ever makes the same mistake - this is how I fixed it: copied the en_us file folder then renamed the copy to eng_us. Now my language file folder contains the following sub files for the english language:
en
en_us
eng_us
Now I just have to go back to my database and make the correction so that I don't get the same error message after the next upgrade.

PS - all fixed. Ran the sql command and it turned all those eng_us to en. The Moodle community is great!!!
