I cannot answer all your questions, but I can tell you that you can selectively disable many of the moodle features through the admin settings. For example, we have a moodle instance that we use for a moodle portfolio. Certainly, in a portfolio situation, you don't need many of the instructional features that are built into moodle--no quizzes, assignments, etc. So we just went into the admin settings and turned off what we didn't need. The capabilities are still there, so you can always go back in and turn them on again should you so desire.

So don't let "complexity" weigh too heavily on your choice. I would think other factors far more important.
